Sugar from sorghum

Sorghum stem juice can be a source of sugar for human consumption. The liquid, however, is a mixture of saccharides such as sucrose, glucose, and fructose. Sucrose, the main component of sugar, is a disaccharide composed of monosaccharide of glucose and fructose, while the monosaccharides inhibit crystallization of sucrose during purification. There are significant variations among sorghum lines in the total amount, content ratio and stability of the sugar in sorghum juice. This finding opens the door to breed sorghum lines targeting sugar production. We already found some lines suitable for sugar production with a high content rate of sucrose, and plan to commercialize them soon.
